Park Eun-young’s Mapo Tofu Rice Bowl: Why the Recipe Uses Two Starches
Chef Park Eun-young’s EBS mapo tofu rice bowl uses fried soft tofu served with a separately cooked pork sauce. The key distinction is the starch: corn starch coats the tofu, while a potato-starch slurry thickens the sauce. Mixing both into the pan would miss the method demonstrated in this version.

The EBS two-serving ingredient list uses 800g soft tofu, 150g minced pork, 100g spring onion and 400g cooked rice. It lists 100g corn starch for coating. The thickener is separate: 1 tablespoon potato starch mixed with 3 tablespoons water. The sauce also uses 550mL boiling water; do not mistake that larger quantity for the slurry water.
Seasonings include 2 tablespoons chili oil, 1 tablespoon cooking rice wine, 2 tablespoons minced garlic, 1 tablespoon doubanjiang, 1 tablespoon gochujang, ½ tablespoon oyster sauce, a little white pepper and 1 tablespoon sesame oil. Coriander and jepi pepper finish the dish. Check the linked Korean list before scaling the recipe or shopping.
Cook the sauce and tofu separately
The method builds the pork sauce first, thickens it gradually, then fries the starch-coated tofu separately. The bowl is assembled with rice, sauce and fried tofu rather than simmering all the tofu in the sauce. Use the official sequence below for the detailed order of seasonings.
Why the two starch quantities are not interchangeable
A coating and a sauce thickener do different jobs. The 100g coating allocation is not a direction to stir 100g starch into the pork sauce. Likewise, the small slurry quantity is not the total coating supply. Keeping two clearly labeled bowls ready can prevent that mix-up while cooking.
Soft tofu is fragile. If you substitute firm tofu, the handling and final texture change, even if the sauce is similar. A substitution may suit your kitchen, but it should be understood as an adaptation rather than the exact EBS version.
